Crab Hash topped with Mushroom Scramble
I mixed crab with mashed potatoes, egg, basil, mustard, Old Bay Seasoning and enough Panko crumbs to bind. Sautéed in olive oil. For the scramble I sautéed crimini mushrooms with smoked garlic and sundried tomatoes ( throw these items in your smoker and you will be amazed at the flavor they impart) Chopped some tomatoes and added that to the mushrooms with toasted pinenuts and Carmelized onions. Whipped up some eggs and cooked over low heat adding grated fontina cheese at the end. Garnished with pea shoots but any greens will do. Adapted from Ramos House Cafe recipes.
