Beer Braised Chicken
2 chicken legs, cut at the joints
1 yellow zucchini
1 purple onion
2 garlic cloves (cut in half with skins on)
Fresh basil leaves to garnish
1 bottle of dark beer (I used Erdinger)
Light olive oil
- Sprinkle salt/pepper on the chicken. Set aside.
- Cut/cube the potatoes, zucchini, onion & garlic. Sprinkle salt/pepper.
- Arrange the chicken & vegetables on a non-flat roasting pan. Pour the beer over the chicken & vegetables followed by 2-3 tablespoons of olive oil.
- Pre-heat the oven at 425 degrees for 10mins. Place roasting tray in the oven & cook at 425 degrees for 30mins. Serve hot.
