First make the #food52 slow roasted tomatoes. They are ridiculously easy and great to have on hand. ( http://food52.com/recipes/34149-slow-roasted-tomatoes-and-farro-for-winter ) sauté some mushrooms in a oil or butter, toss in some fresh parsley and set the mushrooms aside. In the same pan, sauté one diced onion and a couple chopped garlic cloves. Add in one cup of arborio rice and cook following the basic risotto recipe, adding broth until al dente. At the end add about 1 cup of the tomatoes and add back in the mushrooms. Finish with a drizzle of olive oil and some fresh Parmesan cheese. #comfortfood #risotto #tomatoes #notarecipe
