No bake Raspberry Swirl Cheesecake #notacontest #notarecipe #cheesecake #dessert

9 or 8 inch springform tin/ pie plate

//Raspberry Puree//
350g raspberry
60-80g sugar

Add raspberry + sugar in saucepan on low till sugar is melted & raspberry is mushy. Strain through seive.

//For Crust//
300g graham/digestives crumbs
155g melted butter
1 tbsp caster suger

Mix & make crust
Freeze for at least 15 mins

//For filling//

500g softened cream cheese
1 can condensed milk
3 tsp gelatin pwd mixed with 1/4 cup hot water

Food processor, mix cream cheese till very smooth
Slowly add condensed milk
Add gelatin
Mix thoroughly
Pour into prepared crust
Make raspberry drops on surface
Create swirls with toothpick
Set in fridge overnight

Filling has a pudding like texture, unlike 'normal' baked cheesecake.
