Who doesn't need a little dark chocolate every now and again?
Flourless Almond Butter Dark Chocolate Chunk Cookies ? from Ambitious Kitchen to the rescue.
1 cup almond butter (I used fresh ground)
1/3 cup honey
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon vanilla
3.5 ounces dark chocolate bar (I used 85%)
Preheat oven to 350. Beat all ingredients except for chocolate until smooth. Cut up dark chocolate bar into chunks. Mix in 1/3 of dark chocolate chunks. Scoop dough into approximately 18 balls and put on cookie sheet. Add rest of dark chocolate chunks to tops of cookies. Bake for 10-14 minutes until they start to brown.
Serious yum. Nothing processed. All healthy eats.
