Sous Vide Salmon & Salad
My first experiment with sous vide cooking! I did a dry cure on the salmon with a generous mix of salt and a bit of sugar for 20 minutes before rinsing the salmon fillet thoroughly in cold water. I then placed it on a 125F bath for 20 minutes. I served it with a simple chopped romaine salad with a tarragon & shallots vinaigrette.
