Next week's snack is set. Apricot and almond #granola . Preheat oven to 325. Mix 1/3 cup coconut oil, 1/3 cup honey (or maple syrup) and 1/2 cup almond butter. In a separate bowl mix 2 cups of oats, 1/3 cup flax seed, 1 cup slivered almonds (we used honey roasted), 2 tablespoons of cinnamon and a dash of sea salt. Mix wet ingredients into dry until well combine. Spread into a cookie sheet lined with a silicon mat or parchment paper. Bake for 45 minutes, rotating the pan half way through. If you like chunky granola, also mix in an egg white with the wet ingredients. After baking, mix in 1 cup chopped dried apricots. Cool completely and store in an airtight container (we also keep ours in the fridge.). #snacktime
