Grilled romaine and radicchio with lemon garlic dijon mustard parmesan cheese vinaigrette. Seriously delicious and so easy.
Preheat stovetop grill. Cut head of romaine and radicchio in half. Brush cut side with olive oil. Place on hot grill. Check after 3-4 minutes for grill marks. Brush olive oil on other side and flip until grill marks appear.
For the vinaigrette, mix 2 tablespoons lemon juice (grill halved lemon for a couple minutes), 2 tablespoons olive oil, 1/2 teaspoon dijon mustard, 1 clove garlic minced, 2 tablespoons grated parmesan cheese, salt, and pepper in a mason jar and shake.
