A loose interpretation of a recipe from Food52. Wilted arugula in oil, seasoned with salt and red wine vinegar. Removed it from the pan. Softened sliced onion, chopped garlic and chopped roasted red pepper (from a jar). Added chorizo, smoked paprika, and cayenne, and cooked through, adding chickpea cooking water as needed. Added chickpeas. Warmed through. Then stirred in the wilted arugula with sliced scallion and chopped parsley. Spooned into shallow bowls and crumbled feta over top. #onepotmeals #chickpeas
