Halve, roast, and let cool some heirloom tomatoes. Quarter some more tomatoes (leave raw) and sprinkle with some salt to extract those prized juices. Tear up a ball of good mozzarella, chiffonade some basil. Mix together (gently!) in a bowl! More olive oil. More salt. More pepper. A hacked up caprese.
