Scandinavian Gravalox, fresh salmon fillet with skin, cover with a mixture of 1 part sea salt mixed with 2 parts sugar. Top with chopped dill, stems and all and dill seeds. Place in container, wrap in plastic wrap, place weight on top and cure for 24 hours in refrigerator turning occasionally. Slice thin and serve on good rye with mustard.
