Grate a bunch of Parmesan all over a parchment lined baking sheet.
Put two handfuls of green beans in a baggie with an egg white and shake to coat.
Arrange the green beans on the grated Parmesan so they don't touch each other and grate some more all over the top.
Bake 10 minutes at 400.
The sauce can be pretty much anything but this is saurkraut, sour cream and mustard with the Parmesan scraps on top.
