Green sauce: blitz coriander, parsley, preserved lemon, whole chilli (including seeds), olive oil, ground herbs (either coriander, cardamom or nutmeg)
For the olives, wash, drain and dry. Coat with flour, beaten egg, then Panko breadcrumbs, may need a double dip in the egg and Breadcrumbs.
I use soya youghurt, top with green sauce, too with hot deep fried olives.
