Pre-heat oven to 400. Sautee peppers, shallots, onions, canned tomatoes, zucchini, broccoli, frozen peas and Yukon gold potatoes in a mixture of butter and oil. Pour in a little chicken stock add seasoning; paprika, salt, pepper, oregano, red pepper.. Let liquid reduce. Crack eggs over the top while on the heat and still boiling. After about 2 minutes, put in the oven. Serve on egg at a time with lots of veggies.
