Flank steak marinaded in chimichurri and served with creamy mashed potatoes. Flank steak,parsley,arugula,garlic,olive oil,red wine vinegar,crushed red pepper, Yukon gold potatoes, sour cream, butter,salt, pepper. Put ingredients for chimichurri in processor and pulse. Put steak in ziplock bag slather with marinade and refrigerate overnight. Scrape marinade from steak, pat dry and season. Sear 3-5min in each side let rest 10 minutes slice against the grain.
