Cook some barley. Saute chorizo for a few minutes to render fat, then remove. Add in sliced mushrooms and cook until water is gone. Add in chopped onion and sweat for a few minutes. Then sliced garlic for a few minutes. Add smoked paprika and cook for another minute. Add in more chicken stock than you think you need and reduce by about 3/4. Add back chorizo and the cooked barley and mix until it absorbs the sauce. Finish with some goat cheese or another creamy cheese.
