Take some stale country bread, toast it. Chop in food processor with a few cloves garlic, some Parm Reggiano (or pecorino) to a nice coarse crumb. Add lemon zest salt and pepper.

Trim leaves and scoop out the choke. Make sure it sits flat. Bash cut side against chopping board to loosen leaves. Rub with cut lemon and squeeze juice over it. Spoon bread crumbs inside and push gently into leaves. Sprinkle with good olive oil, set in saucepan, fill 2/3 with water, bring to boil, lower to simmer ~ 25 mins, finish in a 400 oven ~10 mins. Sprinkle with coarse salt. One of my favorite comfort foods from childhood.
