Asparagus & Halloumi skewers with avocado "hollandaise"
Normally I just gobble up my asparagus with some butter or dipped in an egg. Decided to mix it up for a change
Cut asparagus and halloumi into equally size lengths ( 4 cm ish)
Roast asparagus at 180c for about 5-7 mins
Meanwhile blitz a small ripe avo with juice of a lemon and 1 tbsp of olive oil with salt and pepper in a food processor or blender
Skewer alternate asparagus and halloumi pieces
Fry in non stick or griddle pan.
Serve skewers with hollandaise and a little flickering of chilli flakes if you like.
