Healthy Thai rice bowls!
The rice takes the longest, so start there and the rest is a breeze.
Cook up turkey with garlic and chili peppers (if you want some heat). Meanwhile, make the slaw and sauce. For the slaw - cut up some carrots and cilantro, mix with lime juice and neutral oil. For the sauce - mix sugar, fish sauce, lime juice, chili peppers and soy sauce. Make a bed of rice, top with meat, slaw and spoonfuls of sauce. I also topped with some slivered almonds that were leftover from a weekend baking adventure.
