Lemon risotto with pesto
Sautée 4 C arborio rice in butter until pearlescent. Gradually add 7 cups hot chicken broth, and a tsp of ground turmeric along the way. Finish with the juice of half a lemon and freshly grated Parmesan cheese. Make a concentrated pesto. This one is 2 Cups lemon basil, 2 garlic cloves, juice of half a lemon and enough olive oil to make it work in a small food processor. Serve risotto with pesto on the side. Finish with a little shredded Parmesan and black pepper.
