Tequila lime chicken tacos
I marinated the chicken for a hour in tequila, lime juice, cumin, chili powder, garlic powder, seasoning salt and pepper. Then baked until tender and shredded. For the beans, I soaked them over night, rinsed and simmered for a few hours until tender. I seasoned the water with cumin seed, chicken base, fresh garlic, onions, chili powder and salt and pepper. To make the tortillas I just used chicken broth in my masa, with a little cumin and a squeeze of lime, smashed in my tortilla maker then fried in vegetable oil.
