Simple toasted rhubarb: pre-heat the oven to 180 degrees. For every 500g cleaned and trimmed rhubarb, add 100g of sugar, toss to combine. Roast covered with parchment paper for 15 mins and another 10-15 mins uncovered. Rhubarb should be soft but hold its shape. Possible flavourings: vanilla bean, tonka bean, ginger or star anise.
