Pro tip: treat the herbs languishing in your refrigerator like any other salad green. Chop up huge handfuls of whatever you got (here: parsley, scallions, dill), place on a bed of curried lentils and quinoa. Fry up an egg for protein, chop up an avocado for fat, throw on preserved lemons for brightness. Finish with your best olive oil. (I think a dollop of yogurt would be really good too)

it is more bio-available when eaten with rice, (think traditional rice and beans).
