brioche + generous spread of mayo on both sides of each slice + lots (more than you think you should really eat!) of good sharp cheddar. cook in a sauté pan over low heat with a lid slightly askew. eat when bread is golden and crisp and cheese is melty. add a spoonful of relish in the middle if you wanna get fancy.
