Pile it up high. I forgot how delicious is it to grill a large portabella mushroom (a grown up cremini mushroom) and top with with lots of healthy eats. Easy. Satisfying. Nutritious.
I used an indoor cast iron grill with a "lid" of a panini press to grill the portabella. There were grill marks on both sides without flipping it over and the mushroom cooks better with the weight of the press along with heat from both sides. Before placing on the grill, brush the portabella with melted coconut oil (or olive oil, but I prefer the sweetness of the coconut oil) for about 8-10 minutes depending on the thickness of your portabella.
Once done, top with any variety of healthy eats. Today's toppings included black beans, cooked ground bison with scallions, and roasted spiralized butternut squash with garlic and coconut oil, and diced avocado on top. This would also be a great base for a veggie pizza. Top with tomato sauce, grilled onions, peppers, broccoli, and cheese. Just place in the broiler once assembled to melt the cheese. The possibilities are endless! Experiment and have fun.
