Sauté carrots, onions, chopped fennel, garlic, and tomatoes in olive oil. Add hot chicken sausage. Add French lentils and 8 cups of chicken stock. Cook for 45 minutes until reduced. Topped with avocado and radishes. So easy. So yum.
