Shrimp and Barley Stir Fry.
Cook barley...stir fry cauliflower until browned. Add white parts of scallions, ginger, slice hot pepper, and garlic and cook until fragrant. Remove from pan and set aside. Wipe out pan.
Add shrimp to hot skillet and cook for 45 seconds on each side. Remove from pan and add to cauliflower.
Add olive oil and cooked barley to the skillet and cook until toasted and kind of crispy.
Add soy sauce, sesame oil, and rice vinegar to barley. Stir to combine. Add cauliflower and shrimp. Stir gently to combine.
Divide between bowls and top with fried egg, and chopped herbs (I used cilantro, mint, and green parts of scallions)
