Sesame ginger noodles.
Cook noodles per package instructions, rinse and keep aside. Make a tahini + sesame oil + soy + sriracha + lime juice + honey + fresh grated ginger dressing right in the bowl. Toss in the cooked noodles, julienned vegetables (used bell peppers, scallions, carrots and cabbage). Top with sesame seeds and serve cold.
You can also use peanut butter instead of tahini. Then I would top with roasted peanuts instead.
