Starting the weekend off right with a batch of chewy dark chocolate cherry coconut cashew almond granola bars with lots of healthy eats. It's a mouthful but you won't be disappointed.

For the base, mix together in a large bowl:

1 3/4 cups oats
1/2 cup chopped cashews
1/2 cup silvered almonds
3/4 cup shredded coconut
1/4 cup chopped dark chocolate
1/2 cup chopped dried cherries
1 tablespoon chia seeds
1 tablespoon hemp seeds

For the glue, heat until melted in a sauce pan:

1/2 cup honey
1/2 cup almond butter
1 tablespoon virgin coconut oil
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon salt

Let the glue cool slightly so it is still warm but not so warm that it will melt the dark chocolate.

Mix the glue with the base thoroughly. There is just enough glue so keep mixing.

Line a 8x8 baking dish with parchment paper and evenly press the granola into the dish. Cover with plastic wrap and place in the refrigerator for several hours (preferably overnight). Cut up and enjoy! Best to store in the refrigerator.
