One of my new favorite desk lunches born from putting myself on a budget. We shredded lots of chicken breast at the beginning of the week and tried to incorporate in to different lunches (well, I did. My husband made chicken sandwiches). This is not too far from that, but is an open face toasted bbq chicken sandwich on wheat bread topped with avocado and greens. Maybe because it's almost summer, but I cannot get enough of these.
