Delicious simplicity! Roasted red pepper, pesto and arugula frittata. Sauté onions and garlic and set aside. Mix 8 eggs, chopped peppers, pesto, arugula, mozzarella cheese and add onion mixture. 350 for 35-40 min. Yum!
