Roasted Garlic Balsamic Brussels Sprouts:
1 lb Brussels sprouts, trimmed and cut in half lengthwise
8 garlic cloves, smashed
Salt & pepper
Extra virgin olive oil
1 tablespoon balsamic vinegar
Preheat oven to 375F. In a cast iron pan, pour enough olive oil to coat bottom. (About 2-3 tablespoons.) Heat oil over medium heat until shimmering. Place the sprouts cut side down all in one layer. Top with garlic cloves and sprinkle with salt and pepper. Cook, undisturbed, until the bottoms brown. Time varies depending on the size of your sprouts, but about 7-12 minutes. Put pan in oven and roast for 10-15 minutes, shaking the pan every 5 minutes or so. Right out of oven, drizzle with balsamic. Serve hot & enjoy!
