Ramp Pesto

Fill small food processor with chopped ramps, add equal amounts toasted pumpkin seeds (or hazelnuts) and pignolis (about 1/2 c each), about 1 tsp salt, 1/2 tsp fresh ground pepper, juice of 1/2 lemon, a few Tbs chopped parsley (if you want to make the ramps gentler, add some Swiss chard), non vegan option- adds lots of Parmesan. Pour on lots of good olive oil (about 1/2 cup) and process to desired consistency. Store in an airtight glass container and top with extra olive oil to create a air seal. Use on crostini, polenta, pasta, eggs, hummus, veggies... Remember breath mints. #notrecipe #pesto #vegan #vegetarian
