Over the years I have made some pretty crappy baguettes, too dense, overly crusty, or bad oven spring–the list and I could go on. That is why when I do make a good baguette is so satisfying. Deep down to the core I can look at them and know I accomplished something that is the sum of many parts. I really believe baguettes take more practice then any other kind of bread. Like knowing when the hydration is right so when you shape the loaf it forms like it should, or that it has rested overnight or uses some sort of preferment for that beautiful brown crust and so the starches in the flour convert to sugars that feed the yeast. These baguettes use a whole wheat sourdough starter combined with traditional yeast and white flour. The bread isn't dominated by sourdough but instead has notes of it. The crust is also thin and crispy which would be difficult to achieve using all sourdough. #baking #bread #sundaybaking #sundaysupper #baguettes #sourdough
