boil baby potatoes until they can easily be pierced with a fork—while that's happening slice ramps, grate cheddar cheese, and chiffon basil. sauté ramp stalks in a slick of oil, crack two eggs in and turn to low. slowly scramble eggs adding cheese and ramps when they are almost done. when potatoes are tender pour out almost all of the water (leaving just a splash) add butter and swirl around until it is melted. shower with basil, a squeeze or two of lemon and salt & pepper. ?
