Made enough cauliflower tabbouleh for a few days of lunch! Rice your cauliflower, finely chop flat leaf parsley, olives, red pepper and seedless cucumber. The salad is dressed simply with olive oil, lemon juice, sumac, salt and pepper.

Did you drop the cauliflower in a food processor and pulse?

Yep! Just a few quick pulses...definitely need to cut the florets uniformly before you stick them in the processor.
