The biggest draw back to anything Parmesan, for me, is breading and frying. Not that I don't pan fry I do but more the thought of that dreaded extra step. In stead of breading and frying I throw in a handful of stale cubes of bread. This is my work around and as it turns out it is also makes this a one-pan dinner. Sauté 4 chicken breast in a 12" pan that has olive oil in it.. Brown both sides but don't worry about cooking the chicken through that will happen in the 400 degree oven you have heating. Once brown, remove them to a tray, and add a tablespoon of garlic to the pan and when you smell garlic add 2 cups of seasoned tomato sauce. Stir. Add the chicken back to the pan, spoon some sauce over them. Place a basil leaf on top of each breast, top with cheese and toss a big handful of croutons across the top. Bake in the oven for 15 to 20 minutes. Remove, garnish with basil, and serve. #dinnerathome #italian #onepot #dinner #sundaycooking
