Strawberry Rhubarb custard tart--this want perfect but I liked elements. Crust: put equal parts ginger snaps and toasted almonds in a food process and grind until fine but with some texture. add rye flour and a pinch of salt. Add a stick of melted butter. If it seems too wet, add more rye flour. Press into the bottom of a pie or tart pan. Rolled out a circle of Odense almond paste and place in the bottom. Add cut up strawberries and Rhubarb with vanilla beans. Make your favorite custard. I won't share mine because I wasn't thrilled with that part. Bake at 375 until set.
