Thanks to Mark Bittman for teaching how to make shirred eggs. It impresses and fascinates friends every time. They think I'm creating something fancy pants. Preheat oven to 375 degrees. Grease a ramekin or two with butter. Add a little heavy cream or even half and half (about 2 tbsp) to bottom of each. Add some left over veggies (here I added leftover greens from dinner the night before.) Add some cheese if you want and crack eggs and add one to each ramekin. Maybe sprinkle a little truffle salt and pepper on too. In the oven it goes for 10-15 minutes (I find 12 is the magic number) and eat with some toast. Easy clean up too.
