Poached eggs in leftover roasted carrot soup. I thinned the soup and added a little fish sauce to put back in some oomph, brought to a simmer and poached 2 eggs in it for about 4 minutes. Spooned the eggs into a shallow dish, carefully ladled in some soup and topped with a little Rancho Gordo hot sauce and some purple basil from my windowsill. Tastes like a fancy restaurant dish but really cost me only pennies to make :)
