How do you make the corn stock?

I use as many cobs as can fit in the pot (kernels cut off previously for another use, cobs frozen until I had time to make it - you can accumulate them in the freezer until cobs fill the bag, and then you're ready!). Sear the cobs on as many sides possible in olive oil (makes the flavor richer), then fill with water just to cover, scraping bottom to free up any browned bits. Add s&p and any aromatics you like. This time I used bay, coriander seeds, and a few sprigs of thyme. Good luck!
