Sautée a chopped onion + 2 minced garlic cloves, and then add 1 can full fat coconut milk, 2 tbsp yellow curry powder, 1 tsp cumin and cinnamon, stir, and let simmer for 20 minutes before adding steamed chopped sweet potatoes, broccoli, and a can of chickpeas. Cover and let continue to simmer until broccoli is soft, and add greens (kale or spinach) and cover again until greens are wilted. Serve over brown rice or quinoa. #notcontest
