Coliflor al pastor, or something like it!
Fresh pineapple, onion, chipotle chiles + adobo, olive oil, salt, and cauliflower roasted at 450 for 20ish minutes.
Served with corn tortillas, raw onions + cilantro, and a swipe of black beans. Would've been entirely vegan if I hadn't added leftover cream to the beans cause, well, #gourmand. ?
