Sauté sliced onion and sliced scallions. Add roughly chopped mushrooms and garlic. Cook until soft. Add two chopped golden potatoes and 3 cups liquid. Bring to boil and then simmer for 20-30 minutes until potatoes are tender. Stir in a bit of heavy cream, mugwort, and baby spinach. Simmer for 10 more minutes. Purée until smooth.

Serve with a crack of pepper and a splash of hot sauce.
