I always make a double batch of pie crust and freeze some, so on a Monday I can just thaw, roll it out and fill with apricots tossed with vanilla bean, sugar, and almonds and bake!

This is inspired! I also make a double batch of every crust; now that local apricots are in the market, I absolutely must make a galette like this. ;o)
