Whole Wheat Apple Pie ?

Crust:
3 cups Whole Wheat Flour, Pinch of Salt, 4 Tbsp Cold Butter, 4 Tbsp Coconut Oil, Ice Cold Water (approx 1/2 cup)

In large food processor, pulse flour and salt together. Pulsing, cut in butter and oil until they're in pea sized beads. Pulse in cold water until beads start to ball together. Turn the dough out onto a floured surface. Mold into two disks (equal size), wrap in plastic and refrigerate for 30 min.

Filling:
4 Granny Smith Apples, Peeled/ Cored/ Sliced
4 Golden Delicious Apples, Peeled/ Cored/ Sliced
3/4c Pure Cane Sugar
1/4 c Cinnamon
2-3 Tbsp Espresso Powder
1-2 Tbsp Nutmeg
Juice from 1 Lemon

Combine all ingredients and set aside for 30 min- 1 hour so everything can soak together.


Preheat oven to 350*.

Roll out one dough disk to about 1/3 in width and pat into buttered pie dish. Pour filling into pie.

(I used a pie vent from Le Creuset, placed in center of pie filling. Another option is to just cut slits into top pie crust for venting.)

Roll out second disk to about 1/3 in width, cover apple mixture and pinch edges together. Using pastry brush, spread milk over top of pie and sprinkle generously with cinnamon sugar.

Bake for about 45- 50 min.

We enjoy this warm with homemade honey vanilla ice cream ☺️.

Looks beautiful! With lots of cinnamon. Love whole wheat for pie crust; white whole wheat flour (instead of red wheat) is our home staple flour.
