I was cleaning out the freezer and found a rack of venison from last years hunt. I hate for them to sit in the freezer to long so I decided to make this wonderful dish that I made last year. It's a rack of venison with April Bloomfields lentil purée and a salsa verde. The thing is, it seems like no one anymore really knows how to French a rack of anything. The bones need to be free of all sinew and protein to be pretty. The process is simple, run the tip of a sharp knife down each rib bone cutting through the rib membrane. Then simply stand the roast up, place your fingers around a bone and push the sinew toward the loin. I'm not a fan of venison, but your dish is beautiful and I'm sure delicious
