Berbere-spiced lamb chops for dinner with Gomen (Ethiopian collards) + homemade flatbread: season a frenched rack of lamb with berbere, ground mustard, garlic powder, s&p and sear in a neutral oil on medium-high for 2-3 minutes per side. Throw in a knob of good, unsalted butter before flipping. Transfer to a baking sheet fitted with a rack and roast at 400F to desired doneness.
