Crostini with Fava and Morels

Celebrate Spring! Shell (until you've got about 2 cups or so) and parboil fresh fava beans for 1 minute (literally) and transfer to ice bath to stop cooking. Peel off outer skin from each bean (not such a big deal). Set aside a handful of beans and add the rest to food processor with squirt of lemon juice, glug of olive oil, lemon zest, 1 chopped ramp, dollop of creme fraîche and s&p. Pulse and scrape down sides until desired consistency (leave a touch rough). Sautee morels and season with s&p and finish with a touch of butter. Toast your favorite crusty sourdough with olive oil and top with Fava spread and morels. Garnish with unprocessed beans, parsley, flaky sea salt, zest and a violet.
