??Homemade Vegetable Stock ??
As you cook, freeze your vegetable trimmings.
Once you have a full gallon bag, drown trimmings in a stock pot with water.
Add an herb bouquet, smashed garlic, salt and peppercorns.
Simmer for the day to desired strength.
Filter through a sieve and can.
* I often simmer for two days, adding new trimmings on day two for extra strength of flavor.
